The Joy of Oatmeal

I love oatmeal.  Yeah, I said it - I love it, and you know what if it were socially acceptable for a person to marry a breakfast food, oatmeal would be the one.  The sad part is that most people just don't understand oatmeal like I do.  That's why I've compiled some of my favorite oatmeal creations for you to try so that you too can come to love oatmeal the way I do.  Each recipe is a riff on this basic oatmeal recipe, so once you've got that down, a world of breakfast possibilities will be revealed right before your eyes...

Basic Oatmeal Recipe
makes 1 serving

⅓ rolled oats
⅔ almond milk (or whatever type you'd like)
a pinch of salt
1 tsp cinnamon
1 tbs chia seeds

+ Put milk and oats in a small sauce pan.  Turn heat to medium, add salt and cinnamon, then give a quick stir.
+ Bring to a low boil.  Immediately turn the heat down and allow to simmer gently.  
Add chia seeds and stir well.  
+ Cook until thick, or textured desire is reached, stirring occasionally to prevent oatmeal from sticking to pot.
Eat warm out of a big bowl with a tiny spoon while sitting on the couch reading the morning paper.

  1. Do you have any carrot-cake-esque oatmeal recipes? Carrot season is upon us, and my family is trying to brainstorm ways to use up those babies!

  2. I tried a carrot-cake oatmeal a few months back but wasn't happy with the consistency. But I'll do some experimenting and see what I can do. :)
